Quick & Healthy Turkey Chili with Clevermade ThermoLUXE

If you’re anything like me, you crave something warm and comforting for dinner on cold winter nights. Nothing fits the bill more than a hearty, flavorful bowl of chili. I love this comfort food for so many reasons: spicy, easy, inexpensive, great to feed a crowd, full of protein and nutrients, and can be made ahead of time and simmered until you’re ready to serve it. What could be better?

With a few simple tweaks, you can make this classic comfort food extra healthy. Swap out ground beef for extra lean ground turkey, which has less fat, sodium, and cholesterol than beef. Add in sauteed bell pepper for extra vitamins and nutrients, and choose canned ingredients with no added salt or sugar. On it’s own, this hearty dish is gluten-free, sugar-free, and dairy-free – great to serve to a large party and let them personalize with garnishes that fit their dietary needs.

I love serving this chili for a game night or big family dinner – it’s a true crowd-pleaser. Now, on to the recipe!

 1 lb extra lean ground turkey
 2 oz olive oil
 15 oz can of black beans, rinsed and drained
 15 oz can of dark red kidney beans, rinsed and drained
 15 oz can of whole kernel corn, rinsed and drained
 1 green bell pepper, chopped
 1 small yellow onion, diced
 28 oz can diced tomatoes
 1 ½ cups chicken broth
 1 ½ cups water
 2 tsp cumin
 1 tsp oregano
 3 tsp chili powder
 ½ tsp garlic powder
 cayenne pepper
 smoked paprika
 salt and pepper to taste
 for garnish: cheese, avocado, cilantro, sour cream, jalapenos, tortilla chips

In large stockpot, heat olive oil over medium heat. Saute chopped pepper and onion until tender. Remove from pan and set aside.

If needed, add more oil to pan. Add in ground turkey turn several times until cooked all the way through. Line shallow baking dish with paper towels, and pour meat and oil into dish - this will help to strain out excess oil.

Use clean paper towel to wipe residual oil from pot and return to heat. Add in broth, peppers and onions, tomatoes, beans, and corn - stir to combine. (If using a crock pot, add ingredients and set to 'low'. Cook for 3-6 hours)

Mix in ground turkey, stirring to combine. Pour in water until you reach desired consistency - I usually use about 1 cup.

Add cumin, chili, oregano, garlic, cayenne, smoked paprika, salt and pepper to taste. Mix well.

Cover and reduce to a simmer. Simmer for at least 30 minutes, up to 4 hours.

Serve hot and garnish with your choice of green onion, cilantro, sour cream, cheese, jalapeno, tortilla chips, or avocado. Enjoy!
